_Nothing is like tasty soup on a cold day. And of course, the pumpkin soup will win since it is the season of pumpkin.
_ It is not just tasty but healthy too. Pumpkin is high in nutrients, and it is rich in antioxidants, minerals, and vitamins like A, E, and C. So, it is good to have the soup if you have a cold. And it also helps with losing weight as it is low in calories and high in fiber.

_ THE INGREDIENTS OF PUMPKIN SOUP:
– 1/2 Chopped Onion.
– 1 TSP Olive oil.
– 1 Big Clove of Crashed Garlic.
– 250 gr Pumpkin.
– 2 Carrots.
– 500 ml of Vegetable broth.
– Small Piece of Fresh Ginger.
– A Pinch of Cinnamon.
– A Pinch of nutmeg.
– A Pinch of Black Pepper.
-A Pinch of Salt if needed ( because the vegetable broth has already salt in it).
_ HOW TO MAKE PUMPKIN SOUP:
– Scrape out the seeds and strings of the pumpkin.
– Brush the pumpkin from the inside with olive oil.
– Then, put the pumpkin and the carrot on a baking tray and let the inside of the pumpkin face down and bake it.
– You know the pumpkin is done when you get a knife through it and see if it is soft.
– let it cool after taking it out of the oven, then peel away the skin.
– Now, cut the pumpkin into cubes or mash it, and cut the carrot as well.
– Now, into a hot pan, put the oil, then add the onion, garlic, and nutmeg.
– Stir until the onion is a little bit soft.
– Add the pumpkin and the carrot into the pan and stir for about 30 seconds.
– Then add the vegetable broth.
– Now, add all the other spices ( cinnamon, ginger, black pepper, and salt if needed).
– Bring to a simmer and let that cook for about 10 minutes.
– You can always add water if the soup is thick for you, it depends on how you like it.
– Now that the soup is cooked, you need to blend it with a blender until it is soft and creamy.
– Now, the soup is ready to put into a bowl and eat.
