HOW TO MAKE HEALTHY, VEGAN PUMPKIN PANCAKES

 

It is good to enjoy healthy pumpkin pancakes at breakfast time on a fall day. Plus, this recipe is healthy and full of nutrients. So here’s a recipe that is so easy to make and delicious to eat.

_THE INGREDIENTS OF HEALTHY, VEGAN PUMPKIN PANCAKES:

 

2 Cups Oat Flour ( you can grind the regular oats to make flour).

1 TBSP baking Powder.

2 TBSP Coconut Sugar.

1/2 TSP Cinnamon.

1/2 TSP Ground Nutmeg.

1/2 TSP Pumpkin Pie Spice.

– A Pinch of Salt.

2 Cups Unsweetened Almond Milk.

1 TSP Apple Cider Vinegar.

1/3 Cup Canned Pumpkin Puree.

Coconut Whipped Cream ( for the topping).

Maple Syrup ( for the topping).

 

 

                            

 

 

_ HOW TO MAKE THIS RECIPE:

 

– First, you need to put all the dry ingredients together and mix them very well because you want the baking powder to be mixed well with the flour to make the pancakes rise evenly.

– Now, before adding the wet ingredients, you need to add the apple cider vinegar to the almond milk and whisk them together. That will thicken up the texture of the milk, so it is better for pancakes, and it will make it just like buttermilk. And actually, the vinegar will work very well with the baking powder to help rise up the pancakes, so they are nice and fluffy.

– Then mix all the wet ingredients and add them to the mixed dry ingredients and then whisk them all together until they are well combined.

– Let the batter sit for a few minutes before starting cooing the pancakes to give time to the baking powder and the vinegar to work together.

– Cook in a nonstick pan after heating up over medium heat and adding a little bit of coconut oil.

– Use a measuring cup to drop the batter into the pan so that every pancake is the same size, so they look nice and even.

– Cook until they are golden brown, and then you can top them with some coconut whipped cream and some maple syrup or any topping you prefer.

– Now, they are ready to eat with a nice cup of coffee on a beautiful fall morning.
